Good Morning. As you lazily walk up the path to the lodge expect a day welcoming breakfast: a variation of the classics such as Coconut French toast or Pacific Eggs Benedict. You should also expect a variety of sliced fruit, grain cereals, and freshly baked pastries hot from the oven.

Good Afternoon. After your morning activity: snorkeling, kayaking, and relaxing. You’re probably pretty hungry. Many guests come strait from their sun soaked hammocks to the cool breezy lodge. Fresh and crispy jerk chicken salads; grilled snapper fillet sandwiches with mango salsa and pesto vegetable pasta are just a few examples of your daytime delectables.

Good Night. It is not time for bed. It’s time to start the beginning of an exciting culinary journey. We start off our grand finale of each day with happy hour. There are tropical drink specials, chilled white wines, and an extensive bar filled with your favorite liquors and top shelf cordials. Happy hour is accompanied with delicious Hors d’ Oeuvres such as Olive Tapenade, blue cheese and almond crustini, assorted cheese plate and many other tasty snacks.

Imagine a candlelit dinner with white linen and polished silver, gentle breezes and fine wine—dining at Tiamo is the essence of "barefoot sophistication." Although it is hard to imagine a more romantic dining location for two, our guests often choose to sit together at one grand table and are often joined by hosts Mike and Petagay or members of the Tiamo staff. With guests hailing from throughout the world, these enlightened island dinner parties excite both your palate and your mind.

Familiar meets exotic with lip-smacking appetizers and scrumptious entrees. You’ll savor your favorite fresh fish, rack of lamb, duck and more combined with tasty tropical flavor, such as: Pineapple glazed Mahi with Caribbean couscous, Jerk rack of lamb with a spicy coconut infused rice, and crispy skinned duck with wild Jamaican rice and citrus dressing. Service is of the highest quality: attentive, unobtrusive, and well versed in the subtleties of fine dining. To eat and drink this well, in a place so remote and serene, is truly a unique opportunity.

Great Day. The preparation of the meals is all done in a commercial sustainable state-of-the-art kitchen. If you peak in the kitchen, you’ll often find the girls laughing or singing as they wash greens with our spring-fresh reverse osmosis water. Solar water heaters provide hot water for cooking and cleaning and the refrigerators and freezers are run by electricity generated by solar panels. We actually make ice with the sun! In addition, Tiamo does not serve Grouper, Lobster or Conch in an effort to help preserve these extremely over-fished local species.
